My mom's PERFECT 14 Carrot Cake:
Combine in one big bowl the following
2 cups flour all purpose
2 teaspoons baking powder
1 1/2 teaspoons of baking soda
2 teaspoons of cinnamon powder
1 teaspoon of salt
2 cups of sugar
1 1/2 cup of Wesson oil
4 eggs
2 cups of grated carrots
8 1/2 oz. can of crushed pineapple with juice drained but don't crush drain, just drain excess from can
1/2 cup of chopped walnuts
Optional: a few scrapes of fresh nutmeg very fine; so tasty with this mmmmm.
Mix in one big bowl with beater on medium until all ingredients are completely combined.
preheat oven to 350 degrees and bake for 35-40 minutes
The perfect cream cheese frosting is made this way combine:
1/2 cup of butter
1 8oz package of cream cheese
1 teaspoon of vanilla
then beat in 1 package of sifted powdered sugar slowly.
Let cake cool, put frosting in fridge, then when both are ready, frost with this most delicious frosting...it's all in the vanilla!!!
My mom can't make enough of these for her friends and they are my favorite, very moist and delicious...enjoy!!!
